Shredded Chicken Tacos (Crockpot)

I love my crockpot. I love it so much I have three of them (no wait, I have four – one is shaped like a football!). In general, I use the crockpot twice a week. Last night, we decided that Mexican was the fare for the day, and I wanted to use a recipe I had found on Pinterest. Then, I couldn’t find the actual pin, so I sort of improvised and it came out really wonderfully.

You may have seen the chicken taco pin that has three ingredients: chicken breasts, salsa, and taco seasoning. I added a little something extra, and it was awesome. I’m calling it my Shredded Chicken Tacos.

You can choose to eat it in many ways which is why I love the recipe. I chose a salad with chips on the side.

Ingredients

  • 2 chicken breasts
  • 1 package taco seasoning
  • 1 small jar salsa (whichever heat level you like!)
  • Optional: Can of black beans

Preparation

  1. Place chicken breasts in the crockpot.
  2. Pour jar of salsa over the chicken.
  3. Empty taco seasoning over the chicken & salsa.
(Add beans if you’re using beans. Be sure to drain them first!)
  4. Cook on high for 4 hours.
  5. Shred before serving. (I like to shred mine with the mixer – yes! This is a thing!)

My daughter chose chips. My husband chose tortillas so that they were really like tacos.

What will you choose?

  1. This looks super easy…I’m definitely going to try it! We have tacos a lot (deconstructed with chips for the kids) but this is a great alternative!
