Shredded Chicken Tacos (Crockpot)
I love my crockpot. I love it so much I have three of them (no wait, I have four – one is shaped like a football!). In general, I use the crockpot twice a week. Last night, we decided that Mexican was the fare for the day, and I wanted to use a recipe I had found on Pinterest. Then, I couldn’t find the actual pin, so I sort of improvised and it came out really wonderfully.
You may have seen the chicken taco pin that has three ingredients: chicken breasts, salsa, and taco seasoning. I added a little something extra, and it was awesome. I’m calling it my Shredded Chicken Tacos.
You can choose to eat it in many ways which is why I love the recipe. I chose a salad with chips on the side.
Ingredients
- 2 chicken breasts
- 1 package taco seasoning
- 1 small jar salsa (whichever heat level you like!)
- Optional: Can of black beans
Preparation
- Place chicken breasts in the crockpot.
- Pour jar of salsa over the chicken.
- Empty taco seasoning over the chicken & salsa.
(Add beans if you’re using beans. Be sure to drain them first!) - Cook on high for 4 hours.
- Shred before serving. (I like to shred mine with the mixer – yes! This is a thing!)
My daughter chose chips. My husband chose tortillas so that they were really like tacos.

This looks super easy…I’m definitely going to try it! We have tacos a lot (deconstructed with chips for the kids) but this is a great alternative!
It also tastes super awesome on a salad. Like, super awesome. 🙂
I’d go with all three! I’ve done a similar recipe before and it’s delicious!
