Pizza Bubbles
I love to cook food for people and I usually bring dinner to friends who have just had a baby. I can’t, however, bring Lydia dinner to celebrate the birth of BabyFlash, so instead I responded to her request for guest posters while she is enjoying snuggle time with her newest little one.
First, I’ll introduce myself. My name is Rabia and I tell stories about my family over at my blog: The Liebers. I have three kids (9, 5, and 2 or 3 depending on when you read this) who keep me on my toes. I work full time outside the home as does my husband, so things are typically busy and chaotic around my house. I like recipes that are quick, easy and kid friendly. Throw in “somewhat healthy” and I’ve got a keeper.
When I first saw this recipe, I think it was called “Pizza Balls,” but that just made me giggle, so I changed the name to Pizza Bubbles and now it sounds so much more fun!
You will need:
A container of refrigerated biscuit dough
4 mozzarella cheese sticks
Pepperonis
¼- ½ Cup butter
Marinara sauce (AKA a jar of spaghetti sauce at our house)
Parmesan cheese
Pizza-type seasonings to your liking
Instructions:
Cut your raw biscuit dough in half and cut your mozzarella sticks into four pieces. Stack a semi-circle of biscuit dough, a pepperoni, and ¼ cheese stick on top of each other like so.
Squish the dough around the pepperoni and cheese to make a ball bubble. Place the bubble, seam side down in a greased 8X8 baking dish. (Yes, that is my dishwasher rack under the baking dish. Trust me; it looks better than my kitchen counters!)
Repeat until you have 16 pizza bubbles in your baking dish. Melt about ¼ -1/2 cup butter and pour it over the top of the whole dish. Sprinkle with parmesan cheese and whatever other spices you like. I like oregano and garlic. *Side note: I had this book (http://www.amazon.com/Papas-Pizza-Berenstain-Bear-Sniffy/dp/0394839226) when I was a kid. One of the smells in it is oregano, and whenever I smell that particular herb, I am instantly transported back to my childhood!
Bake in the oven at whatever temperature the biscuit dough recommends. They may need to cook a bit longer than the biscuit instructions because of the changes made. When they come out of the oven, they are hot and melty and delicious!
I served mine with strawberries, green peppers and a side of warm “marinara sauce” for dipping. The kids loved them! (And so did I!)
