Goya My Plate Cookbook Review and Giveaway

Aaron and I love eating Latin food. Love it. I have always been a fan of this ethnic food since living in Texas. When I lived in Costa Rica for a summer, I learned how to eat the “real” food of a culture instead of the Americanized versions of it.

When I had the chance to review Goya products, I was very excited. I received a package that included Goya Extra Virgin Olive Oil, Goya Quinoa, and the Goya My Plate bi-lingual cookbook.

At least once a week, my little family has taco night. So, tonight, I decided to try out some quinoa and black beans (also from Goya) as a side dish. Miss Sassy Pants is a bit on the picky side, and I assumed this dish would fare well with her.

The cookbook book is full of really awesome ideas and suggestions, and I love that there is a focus on how we can be healthy. The new “MyPlate” nutrition guide is handy:

I wanted to make my own with the ingredients I had on hand and had received from Goya. So, I did a little research and found this recipe for Quinoa and Black Beans. But, I didn’t have all those items on hand, so I tweaked it a little:

I thought it turned out beautifully. The recipe I linked to (above) calls for corn and cilantro. Aaron and I both agree that would be extra tasty — we just didn’t have any on hand. I also thought it would be yummy to add in some chopped chicken to make it a full meal.

Our meal tonight was pretty, though. We had our taco ring and the black bean & quinoa mix.
