My Favorite Quick and Easy Recipes

I’m short on time. Basically every day. I long for the days that I can think, “Whatever shall I do with this free time I have.” Those days are pretty far away, I’m sure.

In the mean time, I rely on a few of my favorite quick and easy recipes to make sure my family eats in all the busy and crazy of this household.

My Favorite Quick and Easy Recipes

Here are a few of my favorites:

Shredded Chicken Tacos

Make these in the crockpot. Just put them in and forget about it! Oh my gracious, they are great. If you make enough, you have dinner for the first night and lunch the next day — and maybe more!

Baked Hamburgers

I call these “stupid easy” because they are that easy. My mother-in-law gets the credit for my knowledge of this fabulous recipe. Quick and tasty. And if you’re familiar with Crystal Burgers, you’ll really like the sauce.

Ridiculously Easy White Chili

I accidentally credited my friend Carol for this recipe, but it ended up being another friend, Lisa, who had made it the first time I ever had it. I did learn to use canned beans unless I’d taken the time to soak the dry beans first. Crunchy beans in a chili is not a yummy thing.

Oriental Salad

I forget about this one a lot – and that’s probably a good thing since it’s addicting. It’s great for taking to family gatherings or church socials. I don’t know anyone who has tried it who hasn’t liked it. Credit goes to my Aunt Vickie!

Best Cookies Ever

These were a complete accident. I ran out of ingredients, and I called my mother-in-law for help. She talked me through how to fix it, and they turned out to be the best cookies I’ve had in my entire life. I’m not kidding.

  1. I made chicken strips the other night. Usually I marinate the chicken, but I hadn’t this time. I dredged them in a beaten egg and then dipped them in bread crumbs mixed with ranch dressing mix. Yum!!
